Oatmeal, Flax & Cocoa No-Bake Cookies

Nothing brings back sweet memories of my mom in the kitchen more than Oatmeal No-bake Cookies. They were, after all, the only sweet she could successfully “cook”. lol (Hi Mom!)

So it should come as no surprise that they’re a big hit in our home too. But you know I couldn’t just make any ‘ol no-bake cookie. Nope, not this Jane. So I added a few pantry staples bulking up the nutrition AND the flavor. So here it is- my Oatmeal, Flax & Cocoa No-Bake Cookies! From my gluten free kitchen to yours.

Oatmeal, Flax & Cocoa No-Bake Cookies



3 cups of rolled oats

2 cups of gluten free flax (kind of looks like Grape Nuts cereal)

1 cup of peanut butter

1/4 cup of cocoa

1/2 cup of sugar

1/2 cup of milk

1/2 cup of butter

1 teaspoon of vanilla extract

1 pinch of salt


Line a large pan (or two) with parchment paper or tinfoil to keep your precious cookies from sticking. In a large sauce pan melt the butter on medium heat. Slowly stir in the sugar, peanut butter, milk, vanilla and cocoa until combined. Remove from the heat and allow the cocoa mixture to slightly cool or 5 minutes.

In a large bowl combine the oats, flax and salt. SLOWLY pour in the cocoa mixture and stir with a heavy spoon (or your hands!). Drop by large tablespoons onto your lined pans. Allow to cool for 20 minutes. Enjoy. Store in an airtight container for up to 1 week…if you don’t finish them all in one sitting. MMMM!

    I don’t know what you mean by gluten free flax. Is this not flax seed? I am not familiar with Grape Nuts cereal so that explanation does not help.

      Thanks for commenting. This is the brand I used, but you could certainly substitute a gluten free flax seed. The difference will be in the texture, obviously. But the flax seeds would compliment the peanut butter nicely. I hope that helps…
