Giving up pancakes was one of the hardest parts of going gluten free. I, admittedly, ate them weekly…sometimes daily. Topped with syrup, jam, whipped cream, butter, or Nutella there really wasn’t any particular method I didn’t like. And I’ll be honest, there isn’t a pre-packaged gluten free mix on the market that compares to a hot, steaming buttermilk pancake. But I’ve come up with a healthful, tasty alternative that satisfies my pancake cravings. They’re full of flax goodness, sweet bananas and topped with gooey chocolate morsels. What more could you want?
