It’s been an expensive month adjusting to our new wheat-free diet, but I think we’re getting the hang of things.
It hasn’t been easy. I’m a mom who’s pretty set in her weekly dinner menu rotation. A complete overhaul was intimidating, to say the least. But we’re managing, and with A LOT of recipe research I’ve regrouped with a menu I’m quite proud of.
A few favorites…
Authentic Chicken and/or Flank Steak Tacos w/Lime and Cilantro
Beef Tips w/Rice
Pan Fried Brussel Sprouts w/Bacon and Onions
Baked Eggs w/Leftover Veggies
Cranberry Glazed Roasted Chicken
etc. etc. etc…
And last night, this was on the menu!
With the help of a pre-mixed gluten-free pizza dough, we had ourselves a “Make your own pie” night. Mine was WAY better!
So it goes without saying that we aren’t starving. Yes, you have to get creative, and YES you have to check EVERY LABEL. But it’s worth it. We’re all feeling fantastic, and out tot hasn’t had a rash or tummy ache in over a month. SUCCESS!
