I HATE wasting food. So, if there’s something in the fridge from last nights dinner that can be re-purposed I’m in!
Baked beans are the PERFECT canvas for experimentation. With a little of this, and a little of that, you’ve got an amazing dish that’s just as perfect for simple family dinners, as it is for potlucks with friends.
Luckily, I had some amazing ingredients to work with, but if your low on groceries get creative. You never know what delicious masterpiece you may create.
BBQ BAKED BEANS
Ingredients:
2 cans of pinto beans, drained and rinsed
1/2 of a medium sweet onion
1/4 cup of diced poblano pepper (green bell pepper would also work)
1/4 cup of light brown sugar
1/4 cup of honey bbq sauce
1 cup of diced meat (Vague, I know. I used leftover pork ribs, but you could easily use bacon, pork chops, leftover beef tips, etc.)
Salt and Pepper to taste
Directions:
In a medium baking dish, combine all of the ingredients. Bake uncovered on the middle rack at 325 degrees Fahrenheit for 90 minutes, stirring once 1/2 way through. In a hurry? Crank up the heat to 375 and bake for 35 minutes…but be warned, the flavor won’t be the same.
