Beanie Weenies

I thought I had shared this with you A LONG TIME AGO, but after thumbing through my MANY MANY recipe posts I realized I had done each of you a great disservice. These are not just beenie weenies like you’d find in a can with a pop top (fond memories of school lunches). This is the richest, sauciest, thickest, yummiest beanie weenie recipe you’ll ever make. It is an ode to my dad, who made them weekly for me growing up. When I visit home he still makes me a pot, with a little bit of everything in the fridge…LOVE IT! Today I made them for my little family, because, to me, there is NOTHING more American than beans and franks.

Beanie Weenies

Ingredients:

3 small cans or 1 large can of pork & beans

1 pkg hot dogs cut into 1/2″ pieces (we like turkey dogs)

1 large onion, chopped

1/2 a bell pepper, finely chopped

1/2 c packed brown sugar

3 tbsp prepared mustard

2 bacon strips cooked and crumbled

Directions:

Combine all ingredients in a slow cooker. Mix well and cover. Cook on low 7-8 hours.

*In a hurry? Throw everything on the stove top and simmer for 20-30 minutes. It won’t be as “combined” or as thick, but they’re just as good when you’re in a time pinch.
