We LOVE potatoes. We enjoy them baked, fried, mashed with every known ingredient and boiled. But occasionally potatoes can be, well, BORING. So a few nights ago I spiced up my traditional potatoes, and before we knew it THEY WERE GONE!
SPICY OVEN POTATOES
Ingredients:
4-5 large russet potatoes, diced into 1/2 inch pieces (I hate peeling potatoes, so I leave the skins on.)
1 teaspoon of cayenne pepper
1 teaspoon of cumin
1/2 teaspoon of salt
1/4 teaspoon of pepper
Pinch of fresh oregano
2 tablespoons of olive oil
Directions:
Preheat oven to 400 degrees Fahrenheit. In a large mixing bowl combine the potatoes, oil, seasoning and herbs. Spread evenly onto a sheet pan. Bake for 20 minutes. Remove them from the oven and toss/rotate for even browning. Return to the oven for 5-10 minutes or until golden brown.
